Another Winning Recipe

This recipe comes from my Mom.  I'm not exactly sure where she got it from, but it's definitely worth your try!  Now that it's getting cold, we all need a new recipe that warms you.

Sausage Tortellini Soup

Ingredients:
1 lb (turkey) sausage links
2 tsp minced garlic
1 med. onion, diced

3 lg carrots, chopped
2 cans diced tomatoes
1 can (8 oz) tomato sauce
5 cans (or cups depending on how big your pot is) beef broth
1 cup red wine (Cabernet)
1 Tbsp sugar
2 tsp Italian seasoning

1 bag cheese tortellini
1 lb zucchini, cubed

Directions:
Take sausage out of casings and cook in bottom of large stockpot until brown with onion and garlic.  Add next 7 ingredients and bring to a boil for 40 minutes (med-high burner).  Add last 2 ingredients, bring back to a boil and then simmer for 10 minutes.  May be served with Parmesan or Romano cheese.

A note to mommies with children:
This meal is possible to do on a day when you have the opportunity to prep the sausage, onions, carrots, zucchini and spices (I pre-measure my spices in tiny little bowls) during the kiddos nap time.  Once everything is prepped, then it's just a matter of dumping stuff in the pot once the sausage is cooked.  This was helpful to me once the "little bug" woke up because I could play with him instead of having to stand at the kitchen counter chopping and dicing.
